Wild Maine Blueberry Martini
Shaken, not stirred...the James Bond way!
Combine 2 full shots of premium vodka or gin and 2-3 Tbl of our Wild Maine Blueberry Jam into a martini shaker. Muddle. Add 1 cup crushed ice. Give it a good shake. Pour straight up or on the rocks. Sit back and relax. Wow!
Also fantastic made with many of our other Jamtastic jams, like Hot 4 Habanero Raspberry or Blueberry Raspberry Rum ! Experiment..and be amazed! Serves 1-2
Happy Fig Bacon Wrapped Scallops
12 Large Scallops
12 slices of Bacon
2-3 Tbl Jamtastic Happy Fig Jam
Precook bacon for 3 minutes in your microwave. Wrap a slice of bacon around the outside of each scallop, secure with toothpicks and place on baking sheet. Place scallops under broiler and broil for 4-5 minutes per side, turning carefully, until bacon is browned and scallops are cooked through. Remove from broiler and liberally glaze with Jamtastic's Happy Fig Jam. Serve immediately. Serves 4. Off the charts good!

Pineapple Jalapeno Stir Fried Shrimp
1.5 pounds large gulf shrimp
3 crushed garlic cloves
2 Cups cooked Black Rice
3-4 Tbl Jamtastic Pineapple Jalapeno Jam
Pinch, Salt & Pepper
Heat a wok or large cast iron skillet over medium high heat. Add 2 Tbl butter and 3 Tbl olive oil. Just as the pan begins to smoke add 1.5 pounds of large gulf shrimp, 3 crushed garlic cloves and a pinch of salt and pepper. Reduce heat to medium. Cook and stir shrimp frequently until they become opaque and cooked through, about 4-5 minutes. Add 3-4 Tbl of Jamtastic's Pineapple Jalapeño Jam, stir into shrimp, reduce heat to low and simmer for 3-5 minutes. Serve shrimp and jam mixture over Black Rice and enjoy. Serves 4. Unbelievably good!
Hot 4 Habanero Strawberry Cedar Planked Salmon
Cedar Plank - Can be purchased at a grocery or gourmet food store
1 salmon fillet, 1-1/2 lbs
4-6 Tbl Jamtastic Hot 4 Habanero Strawberry Jam
2 Garlic Cloves, crushed
Salt & Pepper
This will be the best salmon you have ever had! Our Favorite!
Soak the cedar plank in water for about 60 minutes. Set up the grill for direct grilling on medium-high. When ready to cook, place the plank on the hot grate and leave it until there is a smell of smoke, about 3 to 4 minutes. Brush a bit of olive oil over plank. Place salmon fillet on plank, skin side down. Brush fillet with olive oil. Sprinkle crushed garlic, salt & pepper on fillet. Liberally brush on the jam! Reduce heat to medium. Cover the grill and cook until the fish is cooked through, reaching an internal temperature of 135 degrees F., about 35 minutes. Check the plank occasionally. If the edges start to catch fire, mist with water, or move the plank to a cooler part of the grill. Apply jam throughout cooking process, 1-2 additional times. When salmon is cooked through remove planked salmon from grill and set on serving plate. Using a spatula, cut and remove salmon to individual plates. Serves 4
Bourbon Peach Grilled Chops
4 - Bone in, thick cut pork chops
Jamtastic Bourbon Peach Jam
Salt & Pepper
Prepare an outdoor grill with a high heat for both direct and indirect grilling. Brush the pork chops on both sides with oil and season with salt and black pepper to taste. Set aside for 15 minutes.
Grill the chops over the heat until brown on both sides, about 4 minutes per side. Move them to the cool side of the grill or lower heat and brush with some of the Bourbon Peach Jam. Cook the chops, covered, turning and basting with jam every 5 minutes, until an instant-read thermometer inserted crosswise into the chops registers 140 degrees F. Remove from grill. Let rest for 10 minutes. Brush additional jam on chops right before serving. Fantastic! Serves 4
Raspberry Maple Lemonade
Combine 1-1/2 cups lemon juice, 1/4-1/2 cups sugar, 8 cups water. Mix well. Add 4-6 Tbl of Raspberry Maple Jam. Mix again and serve over ice. Makes about 10 cups. Also great using our Outrageous Strawberry or Wild Maine Blueberry Jam! Very refreshing and perfect for a hot summer afternoon or just about anytime!

No-Bake Christmas Jam Cheesecake
1/2 Cup Jamtastic Christmas Jam
1 Tsp. Powered Gelatin
3/4 Cup Heavy Cream - Cold
12 oz. Cream Cheese - Softened
4 oz. Fresh Goat Cheese
1/3 Cup Sugar
2 Tsp. Vanilla Extract
1/2 Tsp. Grated lemon Zest
1/8 Tsp. Salt
1 Ready to Eat Graham Cracker Cracker Crust
1) In blender or food processor, puree jam until almost smooth; set aside. Place 2 Tbsp. cold water in small microwave-safe bowl; Sprinkle gelatin over water. Let stand 5 minutes.
2) With mixer on High, beat cream until stiff peaks form. In separate bowl beat cream cheese, goat cheese, sugar, vanilla, lemon zest and salt until smooth. Microwave gelatin for 15-20 seconds, or just until runny. Gradually beat into cheese mixture: gently fold in whip cream.
3) Spread half of Christmas Jam on bottom of crust. Spread cheese mixture on top in even layer. Dollop remaining Christmas Jam all over top. Drag tip of paring knife through Christmas Jam to create swirl pattern.
4) Refrigerate, uncovered, at least 3 hours or up overnight.
5) Serve and Enjoy!
